Job Description
Dorada Foods is seeking an experienced, detail-oriented HACCP Coordinator to manage and elevate our facility’s Food Safety, HACCP, and SSOP programs. Reporting directly to the FSQS Superintendent, you will work hand-in-hand with Operations, FSQS Supervisors, and Technicians to ensure our Ready-To-Eat (RTE) products consistently meet strict regulatory, customer, and internal food safety standards.
This is a hands-on, plant-floor-engaged position (~25% floor time). You will serve as the plant’s lead internal HACCP auditor, drive annual HACCP plan reassessments, deliver food safety training, coordinate environmental microbiology sampling, and interface directly with FSIS inspectors and third-party auditors.
What You Will Do:
- HACCP & SSOP Program Oversight: Conduct daily evaluations and record reviews of critical control points (CCPs), process controls, and pre-op/operational SSOPs before product release.
- Deviation Management & Tracking: Investigate critical limit deviations, missed checks, and documentation errors. Verify appropriate corrective actions and preventative measures in compliance with our HACCP plan.
- Auditing & Compliance: Serve as lead auditor for monthly internal plant HACCP audits. Actively participate in regulatory (FSIS) and third-party audits, acting as a primary liaison alongside FSQS leadership.
- Regulatory & Process Upkeep: Monitor new FSIS Regulations, Directives, and Notices. Schedule and update annual or event-driven HACCP plan reassessments and revision paperwork.
- Training & Floor Leadership: Develop and present annual FSQS and HACCP training for supervisors and hourly plant associates. Spend ~25% of your hours on the production floor verifying system implementation.
- Microbiology & Mock Recalls: Assist in implementing environmental microbiology monitoring programs and actively participate in quarterly mock stock recoveries.
- Operational Support: Serve as relief coverage for FSQS Supervisors and FSQS Clerks during vacations or rotating weekend coverage.
Must-Have Qualifications:
- 5+ years of Quality Assurance / Food Safety experience in a food manufacturing environment.
- Ready-To-Eat (RTE) Focus: Hands-on experience in Ready-To-Eat food processing under USDA/FSIS regulatory oversight (Candidates exclusively from slaughterhouses, farms, or commercial kitchens will not be considered).
- HACCP & Regulatory Depth: Strong working knowledge of HACCP, SSOP, SPS, and FSIS regulatory requirements, directives, and notices.
- Audit Experience: Proven track record conducting internal HACCP audits and supporting FSIS/third-party audits.
- Technical Skills: Proficient in MS Office (Excel, Word, PowerPoint) for tracking deviations, trending data, and generating monthly leadership summaries.
- Education: Minimum High School Diploma or equivalent.
Preferred Qualifications & Certifications:
- Basic & Advanced HACCP Certification through a HACCP Alliance-certified program (Required upon hire or ability to obtain immediately).
- Bachelor’s Degree in Food Science, Microbiology, or related technical field.
- Experience with mock recalls, environmental swabbing, and trend analysis.
